Lizzy Farmer shares a focaccia recipe using seasonal wild greens (eg wild garlic, nettle, hops shoots), bread flour, olive oil, salt and yeast. The dough is cold‑proofed for up to 36 hours, then topped with oil and sea salt and baked to golden finish.
